Books/TWoW Spoilers:
Firstly, we only have three named major houses working with the Boltons: Karstarks, Umbers, and Manderlys. From the books/TWoW preview chapter we know that in the absence of the Karstark heir who is prisoner in the Riverlands, the remaining Karstarks are working with the Boltons against Stannis/Jon. They'll likely remain Bolton men in the show.

The Manderlys appear to be playing a very similar role as they did in the books, at least if you take into account the casting call for a fat northern lord who makes a stirring speech and switches allegiances. If they switch allegiances then that leaves Ramsey with only two of the three houses that together supposedly control more than half the manpower of the north.

Greatjon Umber is a prisoner of the Freys and in his absence two other Umbers split their forces and join opposing sides. It's widely believed that the Bolton side isn't entirely loyal and will turn back to the Stannis/Stark side the first chance they get, but we also know from the books that they DO despise wildlings more than any other house.

The real problem with the "Umbers are saboteurs" idea is that if the Umbers AND the Manderlys leave Ramsey, then he's hopelessly outnumbered. We know that this is NOT the case based on leaks and quotes from actors and crew that imply the battle is going to be a real struggle for the Stark side. (One supposed leaker alleged there's going to be a cliche cavalry charge with knights of the Vale saving the day and stealing the glory from the Starks because D&D are shit.) The battle is also supposed to be huge and take up a whole episode, which wouldn't really fit the idea of it being horribly mismatched.
