Destroying the Ring doesn't end all evil, it just sends Sauron.
In the books this confrontation never happens, Isildur just keeps it and that's that, they don't saunter on over to the volcano for a dramatic scene. In fact the issue of what to do with the One was probably going to be an open one until Isildur went and got himself killed and the Ring lost.
