1. Old church slavonic (also known as Old Bulgarian) is NOT the same thing as Proto-Slavic (the ancestor of all Slavic languages). It may be closer to it than any modern language, but it's still a separate branch with its own non-Common Slavic phonetic changes (such as ť > št and or > ra, for example).

2. azъ > jazъ > jaz > ja

Inserting j before initial "a" was an arbitrary phonetic change in most Slavic languages (including Bulgarian, but it was not regular there), and the final "-z" was dropped because "I" is a relatively frequent word (same with English ik > I).

So the reason why jaz turned to ja was because of its use in the phrase 'ja(z) i...' (me and...). It makes sense, considering that Slovenian retained the jaz form but also changed (?) 'i' to 'ino' and then to 'in'.

I believe it was Jaz, not Az. All Slavic languages other than BG changed it to Ja, BG changed it to Az.

OCS is basically from the start of true Slavic divergence, it was still intelligible to speakers of "Great Moravian" (basically the common ancestor of both Czech and Slovak).
