Yes Star Wars is excellent and made use of some ground breaking special effects however the themes it's pursues are childish
That's not to say they're bad or wrong or silly just that they're simplistic and lack nuance and depth
Star Trek meanwhile deals with the very nature of human existance itself and explores themes such the meaning of life and what life would be like without emotion, with too much emotion, it explores sexuality from different perspectives, consciousness is discussed and characters are placed in situations that make them question it
There's countless more as well but Star Trek truly goes deep and is far more mature in terms of what it deals with
