I feel like I should give jazz a try when I see charts like these. Any recs for where to start?

Really depends on what field of jazz you want to tackle.
In general I'd say Thelonious Monk (Monk's Dream) is a good entry point, or Kind of Blue. Or you could get in through fusion because that's closer to rock and easier for many people to get into if you don't want to go full jazz in one go, in which case I'd recommend Mahavishnu Orchestra.

Not super interesting, a lot of electronic music, try expanding your taste a little.
Have you tried the Cowboy Bebop OST? It's not all jazz, but you'd probably like it anyway. Otherwise, you have pretty good taste.
