The theatrical cut was made by Mel and is a better movie, the directors cut was made by the director and is a more faithful adaptation of the book.
Watch the theatrical cut if you're just gonna watch one.

Just got done watching Gallipoli thanks to this post. Thanks, it was a treat.
Apocalypto is objectively his best work and one of the best movies ever made. It's becoming known amongst the plebs now so that statement may seem like its lost its merit but it still stands true.
Apocalypto is a nice movie, but it is very far from the best movies ever made.
