playing in the pocket just means playing too much in synch. Someone will dispute that but its vaguely playing way too all together and conservatively, not taking an risks rhythmically. Easy and predictable.
Like a good funk drummer will play "in the pocket" because he/she needs to keep the beat solid, but a jazz drummer should play more loosely or you get soething boring like the video

This is literally the opposite of what I've heard. I've always heard that ie meant that the drummer (and band overall) are feeling the rhythm so solidly that they can take creative liberties with the timing.

Thats pretty much the opposite of what it means.
Playing in the pocket is playing to the groove not in some robotic perfect rhythm but in a way that fills a role in the band which is in time but also loose, unobtrusive and musical.
