I'm slowly breaking away from the canon, but against all odds I can't seem to put anything other than largely obvious choices in my charts. I have a whole spreadsheet that I've been chiseling at for three years, so eventually I'll be more esoteric.

With all of this post rock, maybe it's time you investigated post modern classical and minimalist recordings some more. I don't have any suggestions since that's not an area I specialize in, but I think that'd be the next logical step after appreciating the post rock canon.
