I do muay thai and I'd say it only takes about 2 years to get a good grasp of it. It's more of a mental thing when it comes to being the aggressor, as in you know you could probably defend yourself if things did escalate but the only way it will save you from multiple attackers is building up your cardio for running away

I would recommend Muay Thai or Boxing.
Get used to sparring then get a scored fight booked (you will never feel ready, but do it anyway).
After a few hard fights you will be sorted against most guys.

1. Depends on how quick you learn, but Krav Maga is one system that you can learn pretty quick, it's meant for that, to make someone fit for hand-to-hand combat in a short amount of time.
2. that also depends on your opponent. how strong is he really, can he overpower you? Did he practice some form of Martial Arts, if so for how long? How quick are you, can he block ect ect. A club is usually pretty crowded, dark, maybe he has some friends with him just as big as him, then your fucked, which leads to your third question,
3. Self-defense against multiple opponents is always difficuilt to argue about, but all in all you can say that if your trained in some kind of Martial Arts, then yes, you can fuck up 2 or 3 thugs that just wildly charge at you or even try it one on one, but even if there are 2 people that know what they are doing, you're already in a massive disadvantage, and if they got weapons you'd be best off to run.
As someone already said, and im not kidding, you would be best of getting a gun or knife, since these require little training. Dont carry a baton if you dont know how to use it, with these you will need some practice to properly defend yourself without just bashing the skull of the opponent in.
If that is not an option where you live, learn some Boxing / Kick-/Thai-Boxing and a Grappling art like Ju-Jutsu (Japanese) or Judo.
Now there is nothing better then a skilled Boxer. No argument here, a good Boxer will fuck you up. In Japanese Ju-Jutsu you have got the Joint locks, which are not that great in devensive situations, but you asked also about offense, and if you can grab your opponent by suprise then you'll be in an advantage over him.
Many Judo schools today focus on stand-up work and not that much ground-grappling. (Maybe a 70/30 or 60/40 ratio) While it takes long to get good at it, let alone master judo, being able to take your opponent down with a sweep or throw is perfect for follow-up techniques.

you should do some other more conventional martial arts before you move onto the purely defensive/survival stuff. i.e. kickboxing/boxing/muay thai/san shou learn basic body movement and head movement, then after you got that down to second nature, do krav. if you do krav first, there's a good chance youll be stiff and slow

The "real world" situation of combat is that the moment you think martial arts will defeat your opponent or any would-be assailant, you've overestimated your ability.
Real fighting isn't training or strategy. It's luck, your weapon and your biological chemistry.
When your life is on the line you'd be surprised what you can forget. Even base levels of training go out the window.
If you want a professionals opinion a master of any art cannot take on more than 3 opponents anyone who says otherwise has only played for sport. In MMA they say "A belt is only worth 30lb"... so much for sizing up your opponent. Unless you wanna learn karate you simply cannot stop someone who is bigger than you. That's why weight classes exist.
I'd advocate MMA for sport and semi-realistic combat experience. For real self-defense try Jujutsu. It was developed to take on armed opponents in feudal japan when faced again samurai.. I admit krav maga is more suited to the short blades you'll run into assuming these aren't organized fights, but street grappling.. but it's too barbaric. You'll never be disciplined enough to use it efficiently.
tl;dr you don't defend your honor; your honor defends you. Your surroundings are your weapons and that knowledge is worth more than any amount of training. Check out Sun Tzus art of war.
