Arepas and tortillas are very different. Tortillas are either made with wheat flour and fat, or from nixtamalized corn flour. Arepas are made from precooked, coarser corn flour (not nixtamalized). An arepa is meant to be cut open and filled, while a tortilla is meant to be wrapped around things. So while they do fill similar roles culinarily, you can't accurately call an arepa a "thick tortilla".

I know what kind of bread you are talking about. In the shop they heat it up in the morning to make it soft when you buy it, but you can just make it soft again by putting it under the grill in your oven (not just heating it up) for up to 3 days after you buy it, after that it can only be used to hammer nails into things.

That's when you slice it up and put it into panzanella or chili

IMO:

Corn > Wheat > Sweet potatoes > Rice > Sorghum > Potatoes > Plantain > Soybeans > Yams > Cassava

You can make white bread without sugar, and generally if you do include sugar, it's literally just a pinch for several loaves, an amount so small it hardly makes a difference (it's only to help the yeast get started).
