Sandor, Davos and Sam are the ultimate sleeperhero's of the series.

I would've agreed before watching the last episode of the latest season, but after the wildfire killing off plots and characters without giving them any resolution, it's become crystal clear that characters don't matter to DnD.

To them, "realism" is more important than narrative. In real life characters doesn't have plot armor and can die at any point, there are no plots or character arcs, real life is absurd, therefore it's ok to write a tv show with no regard for characters or plot, because it imitates life.
