Otherwise you could try looking into something like Sweden or Iceland but immersing yourself in the culture might be difficult, and the majority of other European countries require at least a little knowledge of their language.

There are some nordic countries like Finland that have a higher standard of living and free healthcare and stuff, but I don't know how hard they are to get citizenship in. It's still possible to escape the long arm of gringo law in Mexico, but only if you don't stick out. The two countries work together a lot more than they pretend to do. Even so, it's easier to hide south of the border than it is in the US.

I know alot of people will disagree but in my opinion any nordic country that isn't sweden is ideal. Sweden will most likely also be ok in a few years but right now they are a bit fucked. I would probably prefer iceland if you had to choose a place. Virtually crime free, social safety net, "free" education and a government that actually works for the people after iceland's bankruptcy in 2008.
You might not like these countries because of the democratic socialism but it really does work and basically everyone is happy. At least consider it, you are still free to do as you please for most things and you can still found a firm and become really wealthy.
