Depends really on what needs to be done to kill a zombie. A katana is actually very good at cutting into an unarmored target and would have enough force to severe a spine(at the neck) or possibly cut through the skull but you would have to constantly maintain, sharpen and eventually reforge it. A mace, hammer, club, would all be better choices.

Swords were designed to strike with accuracy to parts of a persons body and to kill them pretty quickly. You want to put him out of the fight. Bleeding an opponent out is not a good strategy because if he knows he will die anyway he is going to fight that much harder to make sure he takes you with him.

Best anti-zombie tactic would be pretty much Roman infantry tactics (if we assume there's no guns anymore).

No, the spear would be to keep them at distance, not to actually kill them. If you had a bunch of people with spears and shields, you could simply make a shield wall, impale the zombies, and then go around and finish them off with machetes.
