Rice with fish on top is call sushi
rolls with fish inside is call maki
fish by itself is call sashimi
but they are all under the general term of sushi

If you wonder what they taste like, they taste like a mouthfull of freshness of the sushi you eat.
Texture is very crunchy. Absolutly delicous but quite on the expensive side. That plate of geoduck cost about 100$
