Ohhh. Okay maybe something like Heavy Kingdom by Wino and Conny Ochs. In fact, most of Wino's solo stuff is acoustic singer songwriter stuff somewhat inspired by the many doom metal bands he has been in plus folk/country.

If you don't mind covers or live stuff, there's Acoustic Wizard, a dude who does acoustic covers of Electric Wizard songs, and of course Warning/40 Watt Sun have both done live acoustic renditions of their tracks.
