I think Plasma 5 looks really good. I don't think you need an elementary OS typ of GUI
I personally haven't used Ubuntu on my machine in a long time after I switched to Debian. That said, we use ubuntu at work as our "default" distro for everything because its a stable release and you can generally google your way out of most problems.
I've never used mint so I can't really comment on it.

Ubuntu/ debian minimal. Mate on top. I use only 180 mb of ram of my 10 gigs idle. That too because so e python scripts running in the background.

I disagree. Go with a distro that takes a lot of manual set up. Arch or slackware imo. That way you actually learn how it works. My first distro was slackware and it was definitely a learning experience
