Besides some of the most popular designs people have already mentioned (2002 Ferrari, Senna-Prost McLaren), the one I'd like to mention is late-90s McLaren.
Nice distributed grey-black color scheme, not too many intrusive ads, smooth, rounded design with not too many wings and canards.

That's the Tyrrell P34. Going by how it's painted this one's from 1976. Only car with more than four wheels to ever win a race. It was definitely unique and ahead of its time, but the advantages of having smaller front tires were offset by higher development costs to Goodyear and then made obsolete by ground effects just a couple years later. A few other teams experimented with six wheels after this, but none actually raced and they were banned in 1981.
In other weird 70s developments, here's the Brabham BT46B "fan car." It raced exactly once, at Sweden in 1978, dominated, and was immediately banned.
I don't know if it's just because that's around the time I first started watching F1, but 1994 had some really nice looking cars.
The last of the Lotuses, the 109, was always one of my favorites. I don't know if it was objectively that good or I'm just biased because I liked Zanardi, but I'd put this up with the JPS designs and well ahead of the Camel or Gold Leaf years.

Actually it was banned between 1982 and 1983 seasons and it happened because Williams FW07E and FW08D absolutely demolished track records everywhere it was tested. Fun fact. FW08D set record in Goodwood festival of speed hill climb in 1995, that record was broken with 1999 McLaren. FW08D is powered with a fucking Cosworth DFV with about 500hp, it is little more than half the power late 90's and early 2000's V10's make.
Main idea behind Williams six-wheelers was to extend bodywork and skirts as far back as possible to generate a lot more downforce with ground effect. As side effect it gives more mechanical grip and reduces lift caused by wheels as they used narrower front wheels in rear as well. How much more downforce it generated? Six wheeler had lift to drag ratio of 13, four wheeled variant of same car had 8. As ground effect was banned as well, 1983 FW08C with flat bottom had lift to drag ratio of 1.1. Another funny thing that happens with four wheels in rear is that first pair of rear wheels will dry the track momentarily in rain so they used slicks in rear pair.
