The room itself had nothing in it intellectually stressing yet he becomes a star child and sent back to Earth after lieing in bed and eating dinner for an indefinite period of time.

I think the idea is that the stargate is what triggered it, and the renaissance room is just the form that the evolution took inside his mind. The stargate sequence is a representation of profound knowledge being imparted upon him, and the room is a representation of the metamorphosis, and the starchild is a representation of the evolved man. Since all of those things are completely speculative and impossible to truly know, it's depicted with abstract imagery.

You might as well ask what it was about the monolith that triggered the apes' use of tools and meat eating. We don't know how the alien technology works, just that it does.

The problem I have with that is, if the star child is metaphorical and not physical, unless the monolith is capable of extending his current life the higher level of understanding that Dave achives through traveling through the stargate is inevitably lost, as mankind has no way of procuring this knowledge, or achieving a higher level of understanding, unless another monolith is sent to Earth

Dave (hummanity) then evolves inside the womb, cacoon, into the "star child" and returns to earth as an evoloving force in much the same way as the monolith at the begginging

It did extend his life. Think of it this way, the monolith triggered a change in him similar to the change triggered by the earth monolith.

He essentially was set down a new development path, Dave was the caterpillar the change acted upon, the room was the cocoon that the change took place in, the starchild was the butterfly that emerged.

The room may have been created by the aliens or by the monolith adjusted Dave, it doesn't matter, it's just a place for him to not go insane while he transitions to a new form of being.

The room was a habitat constructed by the aliens who only had a basic understanding of humanity - hence why the lights were in the floor.

if the entire movie is a symbolism for spirituality vs technology then who "won" in the end? Sure Dave "killed" HAL, but the monolith, supposedly representing technology, was the entire catalyst for Dave's supposed transformation, and is seen viewing the monolith on his deathbed.

An interesting perspective. He traveled at the speed of light and saw himself old in another timeline. Then after foreseeing his future, when he finally becomes old and recognizes the same room where he met himself, at his deadbed, he touches the monolith - reference to the Creation of Adam, literally meaning that the monolith is akin or equivalent to God in the same situation.
