Let's say you open a bakery in their territory, they show up and tell you that you need to pay them monthly for protection. If you don't they smash your shop up and basically run you out of business.

On top of that all the illegal stuff that happens on their turf like gambling, prostitution and so on they get a cut of.

As seen in Sopranos another facet is to use labor unions to blackmail construction companies into giving them money or they halt production or make it too difficult to continue.

I think Tarantino aims to use violence in a different manner to a guy like Scorsese.

Scorsese often glamorizes certain aspects of mob life then peel back the flashy veneer by contrasting it with harsh and hyper realistic violence that comes with the territory. It's off putting but necessarily so.

Tarantino has never aimed for such an impact with his violence, it's cartoonish to the point that it often becomes comical. In a lot of Tarantino films violence is used in the same manner it would be in a Warner Bros cartoon. This makes it difficult when he wants a moment of violence to have impact, like the dog scene in Django, but for the most part I think he succeeds.

Both are totally different uses and I don't think either is necessarily superior to the other. Just different due to the intentions of each filmmaker.
