Tinker Tailor Soldier Spy is pretty great, and a lot more realistic than Clancy's stuff. That said, HFRO is a great movie.

Day of the Jackal was mostly plausible in the way it played out.

Syriana

Spy Games showcases authentic tradecraft. The story isn't very plausible but it's still a real fun movie.
