Mid rare. I cook them sous vide in a cooler of 135 degree water for about half an hour until their internal temp is about 125, then I sear them on a blisteringly hot cast iron grill pan. Pic related. Might be hard to tell in the pic but the top and bottom parts are light pink and the middle is a dark pink.
This was USDA prime ribeye cap steaks btw.

Rare. If it doesn't bleed when I cut into in, it's not rare enough. Light dry rub, and if I put sauce, I use A1. I don't do any sweet barbaque.
