It's a manga that's been running for 20+ years now, and it's pretty incredible. One of the things that's most interesting about it, is that the author has basically reinvented himself in his style several times throughout the series, while still keeping it true to its roots. During the first 10 volumes (referred to collectively as the "Golden Age" arc), it's basically gritty 80s style manga of purely dark medieval warfare, becoming borderlined historical fiction. but in volumes 11-12+ literally hell opens up and pours itself onto earth evil dead style but in a completely serious manner. Over the next ~5 volumes you have every bit of bad in his world corrupted and risen to full blown demonic rape-fests; corrupt priests burning everyone at the stake, packs of roving goblins kidnapping women, raping and impregnating them to make more monsters, an evil god-emporer who tries to take over the world etc. It then turns into a traditional swords/sorcery fantasy where Guts assembles a team of rag-tag heroes to destroy the five God Hands of hell, one of whom was his best friend and rival during the Golden Age.

As for Toradora, haven't watched it due to a combination of laziness and me preferring to use VN's to scratch my romance itch. Heard it's great, though.

KS is a decent "baby's first VN". It was the first one I got around to reading.

Here's a list, arranged in no particular order, of games I've played and would recommend at least checking out
Narcissu and Narcissu 2 are great reads if you want to cry your eyes out, same with Planetarian, and all are fairly short. If Nekopara interests you, each volume isn't particularly long, though there's quite a bit of lewd. Once you get comfortable with longer VN's, you still need to read Grisaia. Yume Miru Kusuri is pretty good. The Majikoi series is a massive time investment but is comfy as fuck so I recommend it. My opinion on Hoshizora no memoria is kind of mixed, but it has its good points. Muv-Luv and Muv-Luv Alternative are obvious recs. Steins Gate is an obvious recommendation, though if you've watched the anime then there may not be much of a point in reading this as the anime is a good adaptation. I had fun with Koichoco but your mileage may vary. I'll throw on a recommendation for Fate/Stay Night even though it should not be your first VN - the first route is extremely boring and garbage. Chrono Clock is okay, I've put it in stasis because i have to go through worst girl's route to get to the routes I might care about. Noble Works is pretty good, though I just kind of got bored of it and dropped it.
Don't forget, you can always browse through VNDB (look the games I've mentioned up on there as well) and see if they catch your interest, and you can always ask me and 911 about VN shit.

KS got my interested since it looked sad and had broken/crippled girls. If there are actual VNs that do that but better, I'll forgo that for them.

Narcissu looks neat, I'll keep that on the radar.

Grisaia, maybe. I saw the anime and although that's not indicative of the VN, dunno if it'll do me right. It was good but not my favorite.
I saw Steins Gate so probably won't read it.

Looking for things that do suffering well, not sure if you're into that genre, though.
