The poison he gave her didn't have any pain involved, which is why she was able to talk in the first place. She wasn't going to die in agony, she was going to slowly drift away.

Jaime obviously didn't think through the ramifications of what she said. Not only did she kill Joffrey but that led to his brother being imprisoned, the Mountain being turned into a zombie but he kills Oberyn...whose family avenges him by killing Jaime's daughter..and then Tyrion on his way out of the holding cell kills their father. That leads inevitably to him losing his other son when he commits suicide while being the King way to early in his life. So the killing of Joffrey leads to the deaths of Jaime's father, other son and his daughter.

I thought it was more about the arch of Jamie's character. In the first season he would have acted out of rage because of his love for his family. Throughout the series he has changed to a more level headed guy who realises he only loves his sister so he only acts in her interest.
