I've listened to hundreds of country albums and was raised on Outlaw Country. Townes Van Zandt is talked about a lot because he really was just that good. Frankly, the people who complain about people who like him are more annoying than the people who think he's the only good country artist, at least on this board.
I'm just gonna post artists who I really like.

Not an artist but Dim Lights, Thick Smoke & Hillbilly Music: The Country and Western Hit Parade is a fantastic overview of country from 1945 to 1970. There's a lot of things missing of course but it's a good primer.
And the Truckers, Kickers & Cowboy Angels: The Blissed Out Birth of Country Rock is a great primer for those interested in Country Rock.
Most folks who know and like Townes know and like Guy Clark, or at least they should.

Bear Family Records in general is the best for old country and early rock n roll. I have a bunch of their gigantic box sets, some of my favourites are Ray Price, Floyd Tillman, and Skeets McDonald.
Yeah, they're also really good with old soul music. I've been digging through their Blowing the Fuse series for a bit.

So, David Allan Coe is a piece of shit for a variety of reasons but he has some good songs to his name. He also ripped off a Townes song but, honestly, the rip off is still pretty great.

It's actually kind of funny, DAC and Townes are both cult figures in and out of the Outlaw Country circle yet they probably have mostly opposite fanbases.

Willie Nelson's really early stuff, primarily his Liberty material from the first half of the 60's, is interesting in that it's almost as much jazz as it is country.
White Light is my favourite of his, but that is amazing too
