Think of it like this, we only sear steaks for taste and hygiene (surface of the steak may carry bacteria). If it's a piece of meat that will give you parasites, don't even eat it well done. Pink or raw in the center is fine, because the center has never touched the environment outside the cow, therefore it is clean.
