Off the top of my head. I'll try and find more that I remember coming across. The above two maybe aren't as polished as you'd like and maybe not the type of eccentric you're looking for but I think they qualify nonetheless.

Watched this with my dad a long time ago but it's great. Not necessarily a singular focus on one weirdo or eccentric, but everyone kind of falls into that camp in this. It's a great documentary though. I don't think there's any other out there about LARPing. Made me want to try it out even.
