I saw one about a guy who got assaulted pretty heavily and after he came out of hospital made this fantasy world with models acting out a WW2 scenerio about a town in france that was a haven.

First saw it when I was a highschool freshman. It was my first introduction to documentaries where the documentary-makers shut the fuck up and just let the subject of the documentary speak for themselves.

Off the top of my head. I'll try and find more that I remember coming across. The above two maybe aren't as polished as you'd like and maybe not the type of eccentric you're looking for but I think they qualify nonetheless.
