Two reasons. One, with the Pai Mei stuff you already have the 70's kung fu movie tropes covered, though MJW's "you bastard" is a great callback to the dubbing of that era. The second is that the main point of the scene is showing Bill's prowess as a martial artist and you really don't need it. We know he's the boss. It's actually more interesting to not see him fight and leave the audience guessing how powerful he must have been in his prime to be this big now without lifting a finger.
