Not all of them do. Persians are one of many ethnic groups inhabiting Iran, although they do form the majority.
The irony is that the country was named Iran because that was what the natives called the country and that name predates Islam, whereas Persia comes from Greek.
But Iranian diaspora probably uses Persian so that they won't be associated with the Islamic regime of Iran.

"persian" is an ethnic group. "iranian" is a broad term applying to anyone living in iran iirc.
They don't call themselves Persian, it's what Europeans called them until 1935, learn history.
Persians were one of the many Iranic-speaking people of ancient Iran. Persian language consumed all other Iranic languages after Islamic invasions, they saw it as some sort of consolidational thing that won't let them assimilate with Arabs like most of Middle-East did.
And yeah, Iran is modern form of the word "Aryan" in modern Persian language.
