Vietnamese food is better than Thai food. Vietnamese food has actual subtlety and depth. Thai food just relies on spices and copying Indian cuisine. Considering all the spices available in that region, it's impossible not to make tasty food. Vietnamese food OTOH doesn't rely on those Indian spices, which makes it a bigger accomplishment.

I do agree with this and understand this, but look at Koreans (Japanese could also be considered, but they live in a islands, and mostly influenced by Tang China), they still have many that don't exist in both China and Vietnam.

In term of grammar they use more or less the same system, if you know Vietnamese and Cantonese vocabulary you can speak Cantonese, somewhat. People will understand what you talk if they think about it a bit.
Though you can only chat about common topic and anything more complex than that will become hard to understand.
Though Vietnamese pronoun is especially board, the "I" when you talk to your friend is different to the "I" when you talk to your parents or siblings. Similar the "You" when your wife calls you is different to the "You" when your boss call you. Cantonese uses the same pronoun as English so it's easier to talk since you only need to know "I" and "You".

The roots of the two languages are different in origin so many basic vocabulary terms are very very different.
That being said, the two languages share some common ground with each other and mutual influences so they have a lot of similar innovations but they're still pretty different. Grammar wise, they're pretty close, but vietnamese tends to use noun+adj and chinese adj+noun.
It is interesting to note that Cantonese and Vietnamese do share a lot of interesting words that other chinese languages tend to not use.
Vietnamese usage of chinese words in daily speech tend to have a shift in meaning from what they originally were so its hard to see the connections sometimes in shared vocabulary, but there is definitely a lot of shared vocabulary, even outside of the Han-Viet vocab set.
