4½ cups all-purpose flour
4 tsp ground ginger
2 tsp baking soda
1½ tsp ground cinnamon
1 tsp ground cloves
¼ tsp salt
1½ cups vegetable shortening
2 cups granulated sugar
2 eggs
½ cup molasses
¾ cup Turbinado sugar
In a large mixing bowl, combine the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside. In a large mixing bowl, beat the shortening until softened. Gradually add the granulated sugar, and beat until fluffy. Add the eggs and molasses, beating well. Add half of the flour mixture to the shortening mixture, and beat well until fully combined. Stir in the remaining flour mixture.
Using a tablespoon, shape the dough into 1-inch balls. Roll the balls in the Turbinado sugar to coat. Place on an ungreased cookie sheet about 2 inches apart. Bake at 350ºF for 12 to 14 minutes or until cookies are lightly browned and puffed (do not over-bake, or cookies will not be chewy.) Let stand for 1 minute before removing from the cookie sheet. Cool.
