Not diversifying their crops, they used the potato for practically everything, as the major feed for their animals and themselves. When the potato crop failed due to the blight and the stupidity was realised, it was quite amusing to fuck with them.

We used potatoes because the British confiscated irish land and leased it back to the natives, giving them only tiny plots of land to feed their families. Potatoes are extremely nutritious and don't require a large amount of land to grow a sufficient amount. It was either potatoes, starve or die of malnutrition. When the famine hit there was more than enough food in Ireland to feed the irish, but it was all exported to England anyway. Responsibility rests on the people who carefully cultivated and engineered the socioeconomic conditions which enabled the famine to occur. Bear in mind that the blight had happened before and still happens sometimes, and never caused such a famine. The blight was just the trigger, long-standing British government policy caused the famine. Ranging from forcing Irish to live on the worst land and requiring Irish farms to be split up into smaller and smaller plots for every subsequent generation (so the only viable crop would be the potato), the awful rights for tenant farmers and the various laws of disenfranchisement that meant there was virtually no middle class and Ireland was a country of famers and landlords (many of whom were in the British parliament), making Ireland more vulnerable to famines and unable to pay for food imports. Not to mention Ireland was a net exporter of food right through the famine, food being escorted to England under armed guard.

And even if they hadn't legislated specifically to impoverish the farmers (which objectively they did), it's still the government's duty to look out for its people and the British government could have done a lot more. They spent in the hundreds of thousands of pounds on food imports, while at the same time they spent millions to send a naval squadron to rescue ONE Portuguese Jewish man who was only nominally a British subject during the don pacifico affair in Greece.
