Many things. I am only an armchair historian when it comes to weaponry.
Thing is, German high command and hitler ignored groundbreaking weapons development before and in the early stages of the war when ther Blitzkrieg went well for them.

Such as Jet aircraft, helicopters, stealth, missile system way ahead of it's day.
They only began to show interest in them when the war turned against them, by then it was already too late.

There are other factors as well. But i think that if the Germans had invested in these things and more before 1943/44 the superior equipment might have given them a slightly better chance. If they had a much bigger trained fleet of 262's they would have been able to defend themselves much better against bombing raids.

For example, had not Hitler cancelled the SturmGewehr in it's infancy, more would undoubtedly have been produced, giving more individual soldiers greater firepower, which would help alot on the eastern front. In fact that is how Hitler came to know about it. Eastern Generals requesting more of them.

Germany had already made a massive technological leap with their armaments. Most of Europe was still armed with Bolt Action rifles and WW1 era machine guns whilst the Germans had the MG34 and Panzer IVs.

Italy for instance had no tanks, and the closest thing that they had was a 3 tonne armored car.
