There is a hadeeth that instructs muslims who couldn't handle the bantz that says not to greet Jews [first], unless they greet you, and to answer something along the lines of "you too". So if a Jew says "peace be upon you", they should say "you too". Same if they say something rude. By the way, according to Fiqh this was decided because Islam established that vengeful attitudes are dangerous yet legit, because while it is permitted to take revenge since God established Lex Talionis, most people will go overboard and end up committing injustice. Several verses attest to this.
Keep in mind that "and you too" originated from a bunch of butthurt Jews bantering muslims, but a lot of scholars think it should be taken as a universal ruling. Most muslims don't do that, because Quran overrides hadeeth as a rule. So when they read 4:86 they don't look further and just apply it with everyone.
Like I said yesterday, there's never only one view. Google "greeting jews/non-believers IslamQA" to get an idea of what Salafis think one should do, even THEY don't insult kuffar.

One of my fave muslim scholars is actually a (philosopher-hating) philosopher, Al-Ghazzali. He was very critical of Sufism because a lot of them didn't take religion as seriously or didn't respect its sacredness as much as he thought was necessary; but it's very apparent through his works and his teachings that he greatly admired the importance they gave to spirituality, which a lot of muslim (especially salafi) imams lack. I use him as a filter, because he took a lot of inspiration from sufis (he was big on debates, so he knew Sufism pretty well) but left aside what he found extreme, non-Islamic or just stupid.
