This is literally one of the points of the movie... in the movie the Germans are civilised and the Americans/British are monsters...
Almost every German soldier/officer is portrayed as being polite, articulate, educated, brave, loyal, caring etc. They all bare some of these traits. People like Sergeant Wilhelm and Private Butz are portrayed as being reluctant soldiers, ordinary people thrust into a war they didn't want to be part of, they just wanted to be with their families, but they were brutalised regardless.
By comparison the Basterds are maniacs that brutalise people without regard or remorse. All of them are volunteers who joined the mission for the purpose of massacring German soldiers. Not for their nation or for honour, they just kill, maim and butcher. In the scene where Hitler is shot, two of the Basterds are shown murdering dozens of innocents and defacing the body of Hitler with glee, even at their own peril.
The point of this isn't that the Nazis were the good guys or the bad guys, but to consider what constitutes a "good/bad guy". Its (in part) an examination of the "us vs them" paradox. Most other tv shows and movies are fine with just leaving it at "axis bad, allies good" with no further examination. I applaud the movie for having a go at it.
Remember the coverage of Gaddafi? For months Gaddafi was universally recognised as the "bad guy" until the "good guys" caught him and cut his fucking head off. Its basically Nietzsche's "Beyond Good and Evil".
