Genetics is just an excuse losers use, 50 years ago the obesity rates in the population were a fraction of today's. Anyone who eats less than maintance WILL lose weight, by physics laws.
When was in the army training, I had to survive 1 month with 1000 calories a day. It sucks on the start but as it goes you realize it's completely possible to do so even for a 190cm guy.

I kind of want to build a decent strength base then try my hand at Olympic weightlifting and see where that goes.

Thats not good you need specific goals to aim for and mechanisms to measure progress/success.
Work in mobilization and ROM improvement if you want to get into Oly type of workouts.
I started doing front squats occasionally. I think im still far from being anywhere strong enough to actually train for oly lifting

My first goal would be mobilization, hamstrings, shoulders, ankles. Aim for good form without weight, how to measure it record yourself and compare to someone you consider to have proper form.
