Hitler didn't want to kill the Jews - and I can't say for certain whether he wanted to since he wasn't at the Wannsee conference - but he certainly hated all of them. He had a chance to prove otherwise during Kristallnacht, where he organised the police to help the protesters smash up Jewish shops. He clearly wanted them to suffer with the Nuremberg Laws he proved how unjust he was by refusing Jews the right to a fair trial and setting up the Peoples' courts.
But, as for the Holocaust, we know for a fact it happened. We don't know how many died, we can only assume, and we should remember all those who died - not just the Jews. Hell, we should remember all those who sacrificed their lives (more importantly) to stop Germany's second chimp-out.
