I want faithful adaptions of the entire Oz series. Directed by Peter Jackson.

I don't think it would make for a successful movie, but I'd like to see an, A Canticle for Leibowitz adaptation. I'm not a textual purist so I don't care how much they change it in order to successfully adapt it. Even if it's awful I'm sure there'd be something interesting to see.

They could just pick one smaller story, expand it, and make a single movie or a trilogy.

I would like to see an epic war-story focused on Jaghut-Imass conflict alone.

Hyperion is sort of space fantasy.
It could be a nice mini series.
