I like Cowboy Bebop's soundtrack. Played the sax quartet song from cowboy bebop once in my high school band. Samurai Champloo also has a pretty good one but some on the lyrics in the raps kind of got lost in translation in that one.

In stark contrast to my normal way of enjoying music, most anime tracks dont quite excite me enough for me to listen to their whole soundtracks. That being said, i do enjoy:
