In Polish we take random number of letters from the beginning of country name:
Grecja(Greece) -> Gre
Francja(France) -> Franc
Japonia(Japan) -> Japo
And later add some random letters at the end to turn it into a name of person from that country:
Gre+k = Grek (male Greek) and Gre+czynka = Greczynka (female Greek)
Franc+uz = Francuz (male French) and Franc+uzka = Francuzka (female French)
Japo+ńczyk = Japończyk (male Japanese) and Japo+nka = Japonka (female Japanese)
And later we use one of 7 grammatical cases on created name. In "I'm Greek" the word "Grek" will turn into "Grekiem" so it will be
Jestem(I am) Grekiem(male Greek in instrumental gramatical case)
