>Slow filter sweep pads with resonance
Miinilogue is great for an accordion type sound too.

though I like the 'hands on' approach best exemplified by what you have posted there, I am more than a bit partial to the Fairlight set up myself.

Modular doesn't inspire me and it sounds all metallic and german
Modular can be just your normal synth components only in discrete parts, but obviously most people choose to do weirder stuff with it
Doepfer sounds all scrapey-slippy
FM sounds really warm to me
