Watch The Original Series (TOS), The Animated Series (TAS), Movies 1-6, The Next Generation (TNG) and Deep Space Nine (DS9) in that order. Also if you want you can check out some of the fan series like Star Trek Continues or Star Trek Phase II on YouTube but that's it, nothing else Star Trek related exists on film despite what anyone else tells you.

Start at the end and work backwards. It might not make sense but then watching it forwards doesn't much help either.

Don't do it chronologically. Start with the best (TNG) and go from there

First start at ENT (Enterprise, came out in 2001)

Then watch season 1 and 2 of Voyager, skip the rest, they're shit.

Skip DS9 and TNG, they are considered the worst of Star Trek universally

Finally start at the last season of TOS and work backwards until you get to the pilot.
