I haven't read/watched the movies in forever, but can anyone refresh me on why Moria or the pass through the mountains was so imperative? I understand that they wanted to dodge Saruman but the alternative was going into the goblin equivalent of Isengard itself with a Balrog and straight into Mirkwood or down into Rohan occupied Isengard anyways

No, the first plan was going over the mountain passes, like they did in The Hobbit
but some ancient evil that lived in the mountain wanted them gone and sent the storm on them

who are "older than Sauron"

You'd get near all the armies of Rhûn, bunch of these guys, and you have to cross half of Mordor on foot, while hiding from all the orcs, meanwhile Sauron and Saruman go to town on Middle Earth

From Rivendell go north to Angmar and Gundabad, cross into the northern frozen dragon filled wasteland, go south to the Lonely Mountain whilst they are getting invaded by Rhûn and Dol Guldur, save the dwarves then march on Dol Guldur, cross Caradhras to avoid Lorien, go through Moria then south into the Gap of Rohan, near Isengard, go through Rohan then go around the dead marches and the mountains, to the roads used by Rhûn to get to Mordor.
When you reach the Black Gate either storm it or say fuck it and go south into Harad, cross the desert and enter Mordor from the southeast, cross Mordor and drop ring in volcano. Exit through Cirith Ungol.

If I remember correctly the other Gondorian cities didn't send their boats, and armies, to help Minas Tirith because of fear from Corsairs, then Aragorn ghosted the corsairs and everyone sent help to Minas Tirith.

I think it is only in the film where they attempt the gap of rohan first

I watched Fellowship last night and its fucking amazing. my criticisms are

Just take a boat up until this point in pic related; now you're in Gondor's expansive farmlands all the way up until Minas Tirith and get to avoid pirates.

Those smaller vessels beyond count could still intercept and attack the fellowship, send notice to the other ships and here come the 50 great ships.
If news came that the fellowship was on a boat then the corsairs would be extra vigilant.

Find one fault

50 GREAT ships and countless others. If you're lucky you might sneak past the massive fleet, but you're probably better off trying to sneak through isengard.

The completionist route, you're max level when you're in Mount Doom with the best gear.

This one sounds the safest, get an elf escort until then, only problem might be Denethor or other men being corrupted by the ring (Boromir maybe)

Too risky travelling through large populated areas with the one ring. Men are weak and will crave it. Also a longer route means by the time Frodo gets near Mt Doom men have already fallen.

1) Stop in the Shire for some pipeweed
2) Go to Grey Havens
3) Fuck off to Valinor until Dagor Dagorath
4) Make new world without evil shits
