A good album cover unironically makes the music sound better
The album cover is the first thing you're exposed to about an album. If it's shit, the artists haven't put any effort into making a decent impression. Why should I care if they don't care? You wouldn't hire someone who shows up to a job interview wearing jeans and a t-shirt, would you?

Although jazz and classical records do a good job of either only showing the artist or an artwork which usually doesn't seem to affect the music near as much it does in popular music.

Sure it does, it's the first thing you notice about an album, it's what brings you towards listening to an album (if it's your first time stumbling upon said album), it's supposed to serve as a visual representation of the album.
Again, not the most important element, the music is what essentially makes the album, but if you ever went crate-digging and knew nothing about the music in that certain crate, the album cover might help in picking out what you were going to buy.
Taking a chance on an album just based on the cover is not always a bad thing, sometimes you fuck up, sometimes you don't, not everything you buy or decide to stream is essentially worth your time/money, but fuck it, it's one of the many methods we discover music.
Anybody in possession of all their mental faculties will make associations of imagery with music. That association means there will typically be a need to visually represent the music when delivered in a physical medium.
