Four animals were available to portray Jones in the original film. The original film was made 39 years ago, and all of the animals used were already adults (they all had a year or two on their belts). The longest-lived cat on record was just past 38 years old.
All of those animals died before John Hurt, the first principal cast member to die, did. Jonesy was in fact the first to die.

The minute the baby alien bursts out of John Hurt's stomach is always the moment I lose interest in this film. Why? Because it is here that class issues are displaced by the struggle against the one enemy, the alien. Parker stops complaining about bonuses (class issues) and focuses on killing the killer monster. But this displacement is, in reality, more dangerous to Parker and Brett than the alien. Recall 9/11. It came down to the same thing. The anti-capitalist globalization movement (WTO) was displaced by the war on terror (WTC). I bring this up because as class tensions increase in our moment, the post-neoliberal moment, the moment when market ideology is in a state of crisis, it's important to ask who would benefit the most from an alien something, before the eyes of everyone, bursting out of the nervous guts/conditions of our times?

Probably bait but in the transition from Alien to Aliens, Jonsey shares hypersleep with Ripley, and comes out just as alive,well, and un-aged as Ripley does. The last time that we see Jones alive, is just after Ripley has made the decision to accept Burke's offer, and go back into the fray. She turns to the dumb cat and says "and you, you little shithead, you're staying here." This Jones (probably a fifth animal unrelated to the Scott production, it does look a bit different) blinks and looks non-plussed.
The context from this scene to the moment of Ripley's death in Alien^3 is that all of other stuff in between takes place MAYBE over a few months or somesuch, but certainly not on a scale of many years like her initial fluke hyper-sleep. When Ripley signs up, neither Burke nor gorman or she (now) has aged to any significant degree. Moreover, special edition timelines point out that Newt has only been in hiding for a period of several weeks, and not several months.
In the transition from the events of Aliens to Alien^3, we may again reasonably infer a short period - aliens have stowed away, and they don't waste any time, as we know.
The point of all this? It is quite reasonable to assume that, barring some accident, Jones the character-cat did in fact outlive all other crew members of the Nostromo, when IRL, the reverse is true.
In fact, when you speak of the original trilogy of films, and ignore the latter, mostly unrelated and regrettable abomination, you can legitimately say that the only survivors /period/, apart from bit players /who are not actually present in the fray during an active alien threat/, are Jones the cat, and Morse the prisoner. IIRC they kill the adult on Fury 161 just before Bishop 2 etc turn up.
