The south west coast is also pretty fucking crowded during summer
If you wish to stay south and avoid tourists as much as much as possible you have to look into the mountains I think, Pyrenees, pre-Alps or Cévennes and other Massif Central ranges but keep away from the sea/ocean for sure
I'll grant you coastal Provence is its own kind of crowded, though
