They don't, there's other ways (Loki and Thor both use alternatives in the Avengers). But the Bifrost is apparently the most convenient way for them to travel an incredibly long distance.

So is Asgard a different planet or different dimension? I always assumed that the 9 realms are dimensions but the Wiki says they're just 9 planets and the Asgardians have met races from all over the galaxy.

Why not Xandar? The Asgardians even believe that humans are 'too primitive' to communicate with. Xandar is literally just Earth but more advanced but the Asgardians did nothing to stop Ronan.
I got the impression from star maps in the actual movies that "realms" are galaxy clusters but they also use it for "planet" which makes Asgard rather pathetic. It's inconsistent.
