Sorry man but you guys focus too hard on having these crazy ass "complex flavors" like you're trying to have the cheese be the main dish. Italianos focus on making it a good ingredient first and foremost, which is why I basically always cook with italian cheese and basically never eat french cheese except maybe as a snack. I'm just not a cheese fanatic enough to eat cheese whole as a full meal.

I have. It's a good general purpose cheese to have around. My favorite from Norway is Ridderost. Sweden has some good ones too like Västerbotten and Grevé. Not sure which cunt Herrgård is from but I like it too.

Everyone knows Wisconsin makes cheese but I didn't realize Chicago does too.

No, Chicago is just the biggest market for Wisconsin cheese. Some small village in the middle of nowhere (USA or Europe, doesn't matter) that produces the best cheese in the world doesn't matter much if there's no economic infrastructure to distribute it. So it's quite ideal that Wisconsin borders the #3 largest metro in the country.

What are your favorite Greek cheeses? They're kind of sadly underrated for cheese in America. Everyone here knows feta (it's very common actually) but that's about it for most Murricans. Kasseri is delicious, as is kefalotyri.
