Catapults also allow for launching more aircraft and quicker. Seeing as how you can spot multiple aircraft at once. USA carries can effectively get 4 aircraft in the air in roughly 5 minutes.
Now understand you dont understand taxiing aircraft on a flight deck, but they move very slowly, so only having one launching point is in fact slower.
