Luke Cage and Iron Fist have been consistently paired up for decades in the comics. Power Man/Iron Fist is one of Marvel's most famous team ups.
They didn't choose Iron Fist because he's white. They chose Iron Fist because people who actually read the comics would be bothered to see a live-action Defenders adaptation that doesn't include Iron Fist.
