2.025€ (netto!) is a somewhat ok income here.
So you need a partner with a good job who is willing to give pretty much all his income for the next 30 years just for the house while you live from your income.

My citys borough has the highest HDI in all the country and is one of the safest and more economically prosperous in latin america so hunting down a place to live here is quiet hard and very expensive for the average mexican

You have a limit of the amount you transfer per month without alerting SAT that you're loaded, if you do small transactions each month then you're set and eventually you won't get heavily taxed.
SAT doesn't care if you "invest" that money in Mexico but if you transfer that money from one account to another then they'll go crazy and fuck your family since they are foreign and you'll have to prove it's a legit transaction.
Go to any financial advisor in Mexico and he'll tell you the same shit.

BTW, I would also recommend you to keep the house instead of selling it.
If it's in Puerto Vallarta (if it's near the beach then you literally have a gold pot and your family is wasting it) and already fully paid then keep it and instead rent it so the value keeps increasing and you ALSO get a profit from it.
Places in a there will always have people interested and will never lose its value, if you inherit it then you'll also have a nice place for vacations if you're interested.
